Cinnamon Applesauce Mini Muffins


Last weekend, I decided to pull out my mini muffin tins and bake up some tiny treats. I found this recipe on Pinterest, and got to work. The results were delicious!


First, preheat your oven to 350 degrees. Then, gather your ingredients and get to work!


In a large bowl, or the bowl of your mixer, cream together the butter and sugar.
Next, add the wet ingredients- applesauce, eggs, and vanilla. Mix until smooth. In a separate bowl, mix together the dry ingredients- flour, salt, cinnamon, and baking soda, and gradually add them into the wet ingredients.
Spoon the batter into a greased mini muffin pan. I made 24 "large" mini muffins, but you could make them smaller and just reduce the baking time by a couple of minutes.


Bake at 350 degrees for 15 minutes, and check with a toothpick to ensure they are cooked through. While the muffins are baking, melt the butter and mix up some cinnamon sugar to dip them in.



Once they are cool, dip the tops in melted butter and then roll in cinnamon sugar, to add a crunchy topping. Then, enjoy! These are Just. So. Good.

To make the batter:
1/2 cup softened butter
1/2 cup sugar
2 eggs
3/4 cup unsweetened applesauce
1 and 3/4 cup flour (I used a cup of white and 3/4 cup whole wheat, but you can use whatever you have on hand!) 
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1 teaspoon baking soda

To make topping:
1/3 cup melted butter
1/3 cup sugar
2 teaspoons cinnamon

Cream together butter and sugar, add eggs, vanilla, and applesauce. Mix until smooth.

Mix separately the dry ingredients- flour, baking soda, salt, and cinnamon, and gradually add to wet mixture and combine.

Scoop into a greased mini muffin pan and bake at 350 for 15 minutes.  A 1 and 1/2 inch cookie scoop was the perfect size for there, if you have one!

Once cool, dip muffin tops in melted butter and then cinnamon sugar. Dig in!
